Layout using my favorite shots from this year’s state fair experience.
Generally we spend most of the HOT days indoors…coloring, playing in the tub with colored water (ice cubes add to the fun!), etc. This summer we’ve spent quite a few days exploring our town. Thus far we’ve visited the zoo twice (they have a fabulous fountain near the entrance that helps to cool us off), an Irish Festival, the Ohio State Fair (gotta love the ice cream at the dairy barn!), and many parks. We’re also growing sunflowers for the first time…to teach our 3 year old about plants. He loves to water them!
Tips to enjoying summer with a babe: Spend lots of time in the shade with a sprinkler or sidewalk chalk and a bucket of water. Endless fun! Check out your local library for baby and toddler story times. Our library even has a summer reading program for the babies and preschoolers. How cool is that?!
Summer food we love: bean salad, fruit salad, homemade popsicles, and grilling every night.

My favorite recipe:
Waikiki Meatballs
1 1/2 pounds ground beef
2/3 cup crushed saltine cracker crumbs
1/3 cup minced onion
1 egg
1/4 cup milk
1 1/2 teaspoons ground ginger
1/2 teaspoon salt
1 tablespoon olive oil
2 tablespoons cornstarch
1/2 cup packed brown sugar
1 (15 ounce) can pineapple chunks – drained, with juice reserved
1/3 cup white vinegar
1 tablespoon soy sauce
1/3 cup chopped green bell pepper
Directions
In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk, ginger and salt. Shape mixture by rounded tablespoonfuls into meatballs.
Heat olive oil in a large skillet over medium heat. Place meatballs in skillet and cook until evenly brown, and meat is no longer pink. Drain excess fat.
In a small bowl, combine the cornstarch, brown sugar, reserved pineapple juice, vinegar and soy sauce. Mix until smooth, then pour into the skillet with meatballs. Cook, stirring constantly, until mixture thickens and boils, about 5 minutes. Stir in the green pepper and pineapple chunks. Heat through.

My favorite summer recipe is Spaghetti Salad.. it’s posted on my blog.
What a great layout!!! The family chef, I am not. LOL. The one thing I love to make is potato salad. It’s easy peasy and soooo yummy! 6 red potatoes boiled in the skin. They peel uber easy under cold water. I like to leave 3 with peels though. Chop them up into bite sized chunks. Dice hard boiled eggs into smaller chunks. Mix in a bow with finely diced onion. Mix in a seperate bowl 10oz miracle whip, 1/8th tsp mustard. Add to the bowl of potatoes with salt and pepper and chill. YUM!!!!!!!
Love your layout!! My fav summer recipe is actually good all year long, but it seems to be a big hit at summer cookouts:
Buffalo Chicken Dip:
2 cups finely shredded chicken breast (I use 2 big breasts, or 4 small ones. poach them and than run them through the chopper)
2 blocks softened cream cheese
2 cups shredded cheddar cheese (divided in 1/2. 1/2 for in the dip, 1/2 for the top)
1 cup RANCH dressing (blue cheese cooked is nasty!!)
hot sauce to taste (I start with 1/4 cup and add until the dip looks pinkish/orange and I smell it to see if I can smell the hot sauce)
Mix all ingrediants and cook in a cassarole dish for 30 minutes at 350!!

My favorite Summer recipe is homemade pasta salad… made just the way my Mom makes it
My favorite summer recipe is my grandmother’s macaroni salad – cook up a box of macaroni and rinse it with cool water. When it’s cool, add a chopped tomato, seeded and chopped cucumber, shredded carrot, and shredded cheddar cheese. Add Kraft Cucumber Ranch salad dresssing and mix together – yummy!
I love going to the state fair, too. The NC State Fair isn’t until October. I love your LO, too! Here’s my favorite summertime recipe.
Lemonade Pie
1 3/4 C cold milk
6 oz Lemonade (concentrate)
2 pkgs. Instant Vanilla Pudding (Lemon makes it taste better)
8 oz Cool Whip (12 oz makes it fluffier)
2 Graham Cracker crusts
Mix milk, pudding, & concentrate together. Then fold in Cool Whip & pour in graham cracker crust & chill well. Easy & simple to make!

Wonderful layout! TFS!! My family’s favorite summer recipe is Broccoli Salad! We make all the time when we grill or “just because”!

Great LO, I love how you used a big photo. And I am also one for staying in the house when it gets too hot.
My favorite summertime drink is the recipe I choose to give you. It is a wine glass of lemonade with a shot of sweet tea vodka. It is really refreshing plus has that twist of the calming effects of the alcohol. Off to party of five now!
Love the LO, Im like you I like to stay indoors in the summer, but its vegas and 115 is never fun to be out in. And the fav dish in this house when the summer hits is easy and takes no heat or cooking for that matter. We like to have fresh fruit of all kinds and frozen yougert salad. Just cut your fruit into bite size peices and mix it into your fav frozen yougert. Those are the nights Im the coolest mom in the world.

A staycation is always the best. That is what we are planning the Summer (its winter here right now. lol)

My favorite recipe is s’mores…you can make them with fudge strip cookies instead of graham crackers and peanut butter cups instead of hershey bars. They are scrumptious. Roast those marshmallows around the campfire with family and friends and enjoy!

hopping along with the blog hop! Summer time at our house is BBQ time, and my easy recipe is to slice capsicums, sprinkle with salt, and douse in vinegar…yummy…try it…it is good! smiles.

1/2 to 1 cup diet cream soda and ice

Watermelon salad:
* 1 (5-pound) watermelon
* 1 Vidalia or other sweet onion
* 1/4 cup red wine vinegar
* Salt and pepper
* 1/2 cup extra-virgin olive oil
* 2 tablespoons chopped fresh mint
* 4 ounces feta cheese, crumbled
* 6 whole mint sprigs
Directions
Cut the flesh from the melon and cut into bite size pieces, removing and discarding the seeds, and set aside. Peel and slice the onion into rings.
In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste, and adjust seasonings.
In a large bowl, combine the melon, onion, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed. Garnish with mint sprigs.
To serve, divide salad among individual plates and garnish with mint leaves.

I’m LOVING the blog hop! One of my favorite summer recipes is a simple strawberry pie. Cook your pie crust while slicing or cutting up strawberries. Once the pie crust is done and has cooled a little, fill the crust with the strawberries, then pour a strawberry glaze (found in the produce section at the grocery store) over the strawberries. Top with a little Cool Whip. YUM!

I think my favorite summer recipe is…. well I don’t know. I don’t do the cooking so, I would say I love my sisters bbq sauce but no idea how she makes it
